Course One

Choice of:

Escarole Salad

Escarole + fennel +frisee + parmesan dressing + pickled shallots + brioche croutons + cracked black pepper

Cauliflower Soup

Creamy cauliflower puree + camembert + toasted pretzel + hearts of celery + fried cauliflower

Ruby & Yellow Beets

Ruby and golden beets sous vide with red wine + goat cheese quark + honeycomb piece + chervil sprigs

fried beet tops + extra virgin olive oil

Brat Nosh

Grilled brat + Noble pretzel sticks + chunk of cheddar + Fat Cactus pickled veg + velvet mustard

Course Two

Choice of:

Steak and Frites

Seared hanger steak + shoestring crispy potato + green pepper sauce + baby arugula


Olive oil sous vide albacore + braised leeks + Myer lemon + wild rice pilaf


Fennel crusted organic chicken breast + red skin mashed potato + poached shallots + AZ honey glazed carrots


Roasted butternut squash + linguine + pancetta + thyme + garlic noge + grated parmesan

Wagu vanilla cake + Grand Marnier poached apricots + crème fresh

Doughnut Holes

Cinnamon mini doughnuts + hot caramel for dipping
